Yum! Eggplant Fries and Preserved Lemon Chicken with rice. Yum!!



I almost did not get a picture of them. I think food is art, too.

Eggplant Fries

The breadcrumbs had garlic, onion, pepper, salt, chili flakes, (all dry powders)

and a sprig of fresh rosemary, dipped in egg and deep fried. Tossed with a bit of Parmesan cheese.   I will be frying these again. They melt in your mouth. I don’t have to worry about leftovers. Next time I may try a yogurt and….. lemon? mint? dip.

Preserved Lemon Chicken

The chicken cooked for about 2 hours at 350 degrees F, covered.  It had preserved lemons, lemon juice, minced garlic,a small amount of chicken bouillon, salt, pepper, a bit of chili flakes, ghee, duck fat, a bit of dried oregano, a bit of onion powder, and water.
